Strawberry Cake Protein Bar

Ingredients

For the base:

1 cup of oat flour

3 scoops of vanilla protein

¼ cup of plain Greek yogurt

2 tablespoons of coconut oil

2 tablespoons of milk

1 tablespoon of maple syrup

1 tablespoon of sprinkles

¼ tsp almond extract

For the topping:

½ cup cottage cheese

¼ cup cream cheese

1 scoop of strawberry-raspberry collagen

1 tablespoon of maple syrup

½ tsp beetroot powder

½ tsp vanilla pudding powder

Instructions

  1. In a large bowl, mix all the base ingredients together until a sticky dough forms.

  2. Transfer to a loaf tin lined with parchment paper and press the mixture down firmly.

  3. In a blender, puree the cottage cheese and cream cheese until smooth.

  4. Transfer to a bowl, then stir in the collagen, maple syrup, beetroot powder and pudding powder.

  5. Pour the filling over the base and smooth the top.

  6. Transfer to the freezer for 15 to 20 minutes.

  7. Cut into bars before serving.
