Protein brownies with date caramel

Ingredients

For the base:

  • 1 1/2 cups almond flour
  • 1 cup of Medjool dates, soaked in boiling water for 30 minutes
  • ¼ cup cottage cheese
  • ¼ cup almond butter
  • ¼ cup of cocoa powder
  • 1 1/2 scoops of proteinDouble chocolate Girl Power
  • 2 tablespoons of ground flax seeds
  • 2 tablespoons of hemp seeds
  • 1 tsp vanilla extract

For the date caramel:

  • ⅓ cup of coconut milk
  • ¾ cup Medjool dates, soaked in boiling water for 30 minutes
  • 1 tsp vanilla extract
  • Pinch of salt

For the topping:

  • ½ cup dark chocolate chips
  • 1 tablespoon of almond butter
  • Pinch of fleur de sel

Instructions

  1. In a food processor, blend all the base ingredients until a sticky, homogeneous dough is formed.

  2. Press approximately 1 tablespoon of the mixture into each cavity of a silicone mini muffin mold.

  3. In a blender, combine the date caramel ingredients until smooth and creamy.

  4. Pour about 1 tsp of the caramel over each brownie.

  5. Melt the chocolate chips with the almond butter.

  6. Pour about ½ tsp of melted chocolate over each brownie, then sprinkle with a pinch of fleur de sel.

  7. Place in the refrigerator until the chocolate hardens.
