Instructions :

In a pot heated over medium-high heat, bring the water, brown sugar, and apple pieces with the spices to a boil. Reduce heat, cover, and simmer for 20 minutes.

Strain the syrup through a sieve and store in an airtight glass jar. (Keep the apples for dessert or lunch; they're delicious.)

In a glass, mix the milk with ½ scoop of protein using a whisk or frother.

Add the ice cubes and the shot of espresso.

In a small pot or bowl, whisk the cream, apple simple syrup and the other ½ scoop of protein until you get a nice foam.

Pour the foam over the latte, sprinkle with a little cinnamon if desired.
