Coffee-caramel protein muffins

A recipe for decadent protein muffins, perfect for autumn.

Ingredients :


  • 1 cup of flour

  • ½ cup ofcoffee/caramel protein

  • 1 teaspoon of baking soda

  • ½ tsp baking powder

  • Pinch of salt

  • 1 cup of milk

  • ½ cup applesauce

  • ¼ cup maple syrup

  • 1 tsp vanilla extract

  • ¼ cup of caramel

Instructions

Instructions :

  1. Preheat oven to 350°F.

  2. In a large bowl, mix the flour, protein powder, baking soda, baking powder, and salt.

  3. In another bowl, mix the milk, applesauce, maple syrup and vanilla extract.

  4. Incorporate the liquid ingredients into the dry ingredients and mix just enough to combine (avoid overmixing).

  5. Divide the batter into a silicone or lightly greased muffin tin.

  6. Add about ½ tbsp of caramel to the center of each muffin, pressing it lightly into the batter.

  7. Bake for 18 to 20 minutes, or until a toothpick inserted comes out clean.

  8. Allow to cool completely before unmolding.
