- In a blender, add all the ingredients for the overnight oats. Blend until smooth. Set aside.
- In a bowl, whisk the ingredients for the creamy layer using a hand mixer until the texture is smooth and creamy.
- In a small pan, simmer the blueberries with the maple syrup and zest for 3-4 minutes, lightly crushing the fruit.
- Assemble in two Mason jars: Pour in the oatmeal first, add the creamy layer and finish with the blueberry compote.
- Refrigerate for a few hours or overnight.
