Overnight oats façon cheesecake aux bleuets

Overnight oats, blueberry cheesecake style

Ingredients

For overnight oats:

  • 1 cup of rolled oats
  • 3/4 cup almond milk (or other)
  • ⅓ cup of plain Greek yogurt
  • ¼ cup frozen blueberries
  • 1 tablespoon of maple syrup
  • ½ tbsp chia seeds
  • ½ tsp vanilla extract

For the creamy layer:

For the blueberry compote:

  • 1 cup of frozen blueberries
  • ½ tbsp maple syrup
  • Zest of half a lemon

Instructions

  1. In a blender, add all the ingredients for the overnight oats. Blend until smooth. Set aside.
  2. In a bowl, whisk the ingredients for the creamy layer using a hand mixer until the texture is smooth and creamy.
  3. In a small pan, simmer the blueberries with the maple syrup and zest for 3-4 minutes, lightly crushing the fruit.
  4. Assemble in two Mason jars: Pour in the oatmeal first, add the creamy layer and finish with the blueberry compote.
  5. Refrigerate for a few hours or overnight.
