Decadent apple & spice parfait

The kind of lunch that feels like a hug.

Ingredients

For perfection:
1 500g tub of cottage cheese
2 scoops fromGirl Power Coffee-Caramel Protein
3 tablespoons of milk
2 tablespoons of maple syrup
1 tablespoon of chia seeds
½ tsp vanilla extract
1 ⅓ cups of vanilla Greek yogurt

For the caramelized apples:
2 medium-sized apples, diced
2 tablespoons of butter
3 tablespoons of maple syrup
1 tsp of cinnamon
½ tsp nutmeg
¼ tsp ground cloves

Instructions

  1. In a pan heated over medium heat, sauté the diced apples with the butter until they are almost tender and lightly browned.

  2. Add the spices and sauté for 1 minute. Pour in the maple syrup and stir gently while the apples caramelize. Set aside.

  3. In a blender, blend the cottage cheese, protein, milk, maple syrup, chia seeds, and vanilla extract until smooth and creamy.

  4. Divide the mixture into small glasses or jars. Add a layer of Greek yogurt, then top with caramelized apples.
